These two bite treats are great for anyone who isn’t a fan of chocolate but still wants a sweet snack every now and then. Best of all, they’re no-bake and ready in less than 30 minutes!
Satisfy Hunger with Fiber and Healthy Fats
Although these truffle-sized balls are tiny, they pack in a lot of flavor with the added benefit of filling fiber thanks to pecans and almond flour. Ingredients
- 2/3 cup dried dates pitted
- 1 cup carrots shredded
- 1 cups raw pecans halves
- 1/2 cup blanched almond flour
- 2 tbsp coconut oil virgin, unrefined
- 1 sachet Pique Ginger Digestion tea
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp sea salt
Instructions
- Soak dates in 1 cup of hot water for 5 minutes. Drain dates and add to a food processor. Pulse until dates are crumbled. Add tea crystals and remaining ingredients and continue to blend for 10-15 seconds or until thoroughly mixed and pecans are finely chopped.
- Form mixture into small balls using a tablespoon measuring scoop and place on a parchment paper-lined tray. Transfer to the freezer for 15 minutes to set. Enjoy!
