A Black Tea Unlike the Rest

You may be familiar with the rich flavor that black tea has to offer. It is a solid standalone tea or equally enjoyable with honey and a squeeze of lemon. However, this particular Pu’er black tea is unique because it is fermented, making it terrific for gut health support. Probiotics help to support the delicate microbiome of the digestive system. 

Because black tea is so versatile, it’s great for infusing in cocktails. For this recipe, fermented pu’er black tea is dissolved into coconut sugar simple syrup for a rich and condensed syrup to spoon into the old fashioned. If you’re used to using white sugar in an Old Fashioned, you will notice a deeper, caramelized flavor with hints of black tea and tannins, for a cocktail that begs to be sipped and savored. 

The Benefits of Bitters

Bitters are aromatics used in cocktails to enhance their flavor and aroma. They’re made with roots, herbs, bark, and fruit. Because they are highly concentrated, a few drops go a long way. They can range in flavors from orange and cherry to a more traditional bitter known for its scent of clove and cinnamon. Bitters are thought to have therapeutic properties and are used to help soothe digestive upset, relieve heartburn and help breakdown fats and soluble vitamins. 

Note: use a quality bourbon for best flavor and smoothness.

For Pu’er Simple Syrup

  • 1/4 cup filtered water
  • 1/4 cup coconut sugar
  • 2 sachets Pique fermented Pu’er black tea

For Cocktail

  • 2 oz. bourbon
  • 2-3 tsp Pu’er simple syrup
  • 2-3 dashes Angostura bitters
  • 1 dark cherry
  • Orange peel
  • Large ice cube


  • Heat water in a small saucepan over medium heat until boiling. Stir in coconut sugar and boil for 2-3 minutes. Turn heat off and stir in Pique Pu’er black tea until sugar is dissolved. Transfer to a small jar and cool to room temperature. Refrigerate for 2 hours.
  • To make cocktail: combine bourbon, 2 dashes of bitters and 2-3 teaspoons of simple syrup in a pint glass. Stir to combine. Pour over a large ice cube in a cocktail glass and garnish with orange peel and cherry. Sip and enjoy!
