Whipped Hibiscus Lemonade Recipe

Lemonade gets a creamy makeover with the addition of a whipped lemonade topping made with coconut cream and hibiscus tea! 

Nothing beats a refreshing glass of fresh squeezed lemonade. This vibrant fruit-forward lemonade uses antioxidant-rich hibiscus tea to create a jewel-toned lemonade with tart raspberry notes. 

A Fruity Flower with Antioxidants to Boot

Hibiscus tea is made from the hibiscus flower. It’s naturally high in immune supporting vitamin-C and phytonutrients that help to fight free-radical damage. 

Once the hibiscus lemonade is chilled, it’s time to whip up the coconut cream lemonade topping. Since the hibiscus tea crystals are already tart, just a little extra lemon juice is added along with powdered erythritol sweetener. The powdered variety of erythritol sweetener is less grainy, so it blends easily into the coconut cream. 

You only need the thick cream layer portion of coconut milk. The texture should be firm, so pop the can in the refrigerator for 1 hour if it is still liquid when you open the can. 

Using a hand mixer, whip the coconut cream with the other ingredients until soft peaks form – the mixture doesn’t have to be super firm. Spoon on top of hibiscus lemonade in a glass and sip away! 

The whipped lemonade topping can be stirred into the lemonade as you sip to turn the lemonade creamy. 

Whipped Hibiscus Lemonade Recipe

Hibiscus Whipped Lemonade

Ingredients

For Hibiscus Lemonade

  • 1/2 sachet Pique Hibiscus tea crystals
  • 1/2 cup hot water
  • 1 tbsp lemon juice
  • 2 tsp honey or erythritol sweetener

For Whipped Lemonade Topping

  • 1/2 cup coconut cream
  • 1/2 sachet Pique Hibiscus tea crystals
  • 1 tsp lemon juice
  • 1-2 tsp powdered erythritol sweetener

Instructions

  • Combine ingredients for hibiscus lemonade and stir to dissolve tea crystals. Refrigerate 1 hour to chill.
  • When ready to serve, use a hand mixer to whip together ingredients for whipped lemonade topping until fluffy with soft peaks. Add ice to a glass and top with lemonade and whipped lemonade topping. Enjoy!
