Lemon might sound like a strange flavor for a latte, but in a tea latte it’s the perfect pairing. Lemon juice, white peony tea crystals, coconut sugar and a small amount of water provide the base for the latte. Coconut milk is then added for creaminess and a thicker texture than low fat milk. Look for the canned variety of coconut milk without added sweeteners.
White peony tea mingles with the lemon flavor of this latte and adds its own floral notes. This white tea is less oxidized than green or black tea, preserving its catechins that support the immune system and can help fight free radical damage. White tea also aids in digestion and provides a calm energy with a moderate amount of caffeine. Since this tea does contain caffeine, enjoy it in the morning or early afternoon.

- 1 tbsp fresh lemon juice
- 1 ½ tbsp coconut sugar

- 1 1/2 cups steamed unsweetened full-fat coconut milk
- Dairy-free whipped cream for topping
- Lemon zest for topping
Instructions
- Combine water, lemon juice, and coconut sugar in a small saucepan over medium-low heat. Once steaming, stir in white peony tea crystals until dissolved.
- Pour into a large mug and add steam coconut milk. Top with whipped cream and lemon zest. Enjoy hot.
